Description:
Colour: Deep crimson with a ruby hue.Bouquet: Powerful and complex, with cassis, blackberry and plum aromas accompanied by toasty vanillin oak and dark chocolate characters derived from barrel fermentation and maturation. Palate: Complex palate with rich cassis and blackberry fruit flavours highlighted by characteristic minty notes. Dark chocolate and spicy oak flavours compliment this full bodied wine style, which displays a long, velvety, fine-grained tannin finish. Cellaring: Drinking well now, but will develop further with up to ten years in the cellar. Winemaker Notes: After crushing, the must was fermented in headed-down stainless steel fermenters. The juice was pumped over three times a day for seven days to ensure maximum extraction of colour and flavour. The juice was then drained from the tank and the skins pressed. The wine then completed primary and malolactic fermentation in a combination of new (35 per cent) and used French and American oak barriques, hogsheads and puncheons. Following fermentation, the wine was racked off lees and returned to the same barrels, where it was matured for 20 months. Premium fruit for this wine was sourced from McWilliam's vineyards in the famous Coonawarra district in South Australia. The fruit was harvested in mid March to early April.
