Vinification Vinedo Sotes, named after the locality of the estate is a blend of Tempranillo, Garnacha, Merlot, Cabernet, Graciano and Manzuelo. The wine reflects both the winemaking style of oenologist Jesus Lezaun and the terroir of Sarria's vineyards.Depending on the vintage the wine sees between 3 and 6 months in new allier casks following malolactic.The grapes were harvested by hand in September-October and gently pressed by pneumatic press . Temperature controlled fermentation in stainless steel and malolactic fermentation followed. The wine is then transfered to 100% new Allier oak barrels for 3-6 months. (6 x 75 cl)

Vinification Harvested at the optimum stage of ripeness. The must ferments naturally amd is kept at a temperature of around 28 degrees. Malolactic fermentation and many decantings preceed the aeging process, which is performed in French oak casks for one year. Once bottled the wine remains in the winery for at least one yearbefore finally released.
