A domaine is not the sum of their interests. It is the sum of their gifts. St. Exupery’s beautiful words could have been written for the Sabons, proprietors of Domaine de la Janasse.
Aimé Sabon first established his cellar in 1973 and now owns a total of 50ha including 13ha in Châteauneuf-du-Pape. The best sites are planted on a mix of galet stones, sands and clay and provide exceptional fruit.
Since taking over the winemaking from his father in 1991, Christophe Sabon has set this 45 hectare property on the road to becoming the Beaucastel of the future. Tiny yields from the old vines give great intensity of fruit, while the flavours are preserved by temperature control, and expertly sculpted by judicious us of barrique. Christophe’s talent is to express the brightness and intensity of the grape, and capture all the nuances of terroir.
Harvest is by hand and the grapes are transported in small wooden crates in order to reduce bruising. After de-stemming they are gently crushed in a pneumatic press and fermented at a cool, controlled temperature in stainless steel. Ageing is in barrels for 6 months, 25% of which are new, and batonnage is performed regularly. Only 5000 bottles made annually.
The nose is fresh, fruity and aromatic, with ripe tropical and dried fruit characteristics. The palate is medium bodied with a succulent texture, balanced alcohol and acidity and a great concentration of dried fruit flavours, such as apricot and peach, with a honeyed, silky finish.
