Winemaking:A combination of winemaking techniques are used to produce a final blend with complexity and balance.These include cold maceration before fermentation,inclusion of whole berries and allowing the wines to ferment naturally.The components remain separate until final blending.Maturation is completed in new,one year old and two and three year French barriques for 10 months for all parcels.Minimal handling and filtration is adopted to preserve fruit flavour.
