This dry red blend of 50% Merlot, 30% Pinotage and 20% Ruby Cabernet shows the slight sweetness of ripe berry fruits, combined with more earthy tones and well-integrated tannins. Although this wine is far more complex than previous editions of the Cederberger, it is already approachable and ready to drink, but should improve in the next four years. Our Cabernet Sauvignon vineyards are 16 years old, situated on southwest-facing slopes. Fermentation of the vintage happened in closed tanks for nine days at 26ºC, while the juice was pumped over every six hours, resulting in a 14% alcohol level. The wine was then matured in French oak barrels for 14 months. Try some of these words to describe the first impression: succulent, savoury, powerful, broad-shouldered, elegant. Ripe mulberry / plum fruits with cool cedar whiffs make a splendid introduction on the nose. The full rich palate is seriously structured, with ripe mulberry fruit backed by fine, slightly juicier tannins that end with a lovely dry finish. This Cape classic showcase wine from a 24 year-old single vineyard leads the pack in the Cederberg range. Production is limited to ñ 180 cases. The hand-crafted, classically styled vintage, is already eminently drinkable. Serious looking deep almost black colour. The 18 months maturation in 100% new French oak barrels has added complexity to the rich, multi-layered plum and cassis fruit flavours, adding tobacco and eucalyptus and some earthy tones. A classically dry finish with a touch of Merlot to help soften the firm Cabernet muscle. Bottled only in top years , this is a wine with power and depth for a long life. (6 x 75 cl)
We think that this wine combines power with elegance. It is modern and delicious, rich but fresh, firm but approachable. The generous dark chocolate, roasted coffee and mulberry fruit on the palate are quite irresistible. Lots of spicy flavours and delicious juicy tannic texture give the wine an impressive depth. For 14 years our south-facing Sauvignon Blanc vineyards were keeping their secret, but this harvest, with a acid of 7,4 and 1,9 grams of sugar per liter, is definitely hinting at what Cederberg Sauvignon Blanc is all about: a unique South African wine with very definite nose and palate characteristics. An elegant and exciting crisp wine with highly concentrated gooseberry and fig leaf aromas, as well as some dusty/peppery whiffs.
