Cinzano Bianco: Light and fresh with subtle aromatic flavours featuring high quality wines specially blended according to an original process developed in Italy in the 18th century. The original 'Bianco' with Italian history and heritage. As a refreshing long drink serve with tonic or soda or alternatively neat over ice.
Cavalchina is the name of the area where the winery has been built and is probably named after the old residence of the Count Cavalchini. The estate, in the south east of the Garda amphitheatre, was established at the beginning of the last century. The most important aspect of Azienda Agricola Cavalchina is that in 1962 it was the first producer to put Custoza as the name of the wine from the region and was made with Fernanda, Trebbiano and Garganega grapes. Today, this wine is a blend of 30% Fernanda , 30% Trebbiano, 30% Garganega, 10% Trebbianello This wine came from the vineyards in Casella, Mandolara, Bacino, Bianchette, Cavalchina e Monte. Here each variety matures at a slightly different time, the beginning of September for the Trebbianello, late September for the Fernanda and the beginning of October for Trebbiano and Garganega. This means that each variety has to be vinified separately. The grapes, manually harvested into small boxes to prevent crushing, are then destalked and pressed. Only the Fernanda, with its slightly aromatic character, is briefly macerated before the pressing. The must, after clarification, ferments for 10-15 days at a temperature of around 18ºC. The decision whether to have a malolactic fermentation, to compensate possible excesses of acidity, depends on each vintage. Next the wines are left on their lees to maintain their freshness, up to late January or early February, at which point the final blend is assembled. This wine is a lovely pale yellow colour with a lively, lemony, punchy flavours and a classic leafy marzipan-spiked finish. (12 x 75 cl)

The Wine: bright straw yellow; fragrant and persistent bouquet with specific notes of flowers , recalls of musk and apple; dry taste, fresh and well balanced with a fruity long and pleasant aftertaste of ripe fruits and sweet almonds. Vinification: the grapes are picked at the end of September when the degree of ripeness is perfect. 50% of the grapes is vinified (6 x 75 cl)
A rich, full bodied wine with flavours of honeydew melon and other tropical fruits. Grape Varieties Tocai Friuliano, Garganega, Riesling Italico, Chardonnay & Trebbiano Toscano. Maturation and Vinification The grapes are harvested from 15 to 20 year old vines in vineyards located in Sommacampagna in Custoza. They are then fermented at controlled temperatures in stainless steel tanks with partial malolatic fermentation. 90% of the wine is aged for 5 months in stainless steel tanks whilst the remaining 5% is aged for 5 months in 10hl barrels.
