This Viognier shows lovely stone fruit aromas and a pure white peach flavour on the palate. The wine was fermented in stainless steel and is unoaked to preserve its fruit character. It has excellent balance and clean finish. Persimmon is a label created by Liberty Wines, in conjunction with top Italian oenologist Alberto Antonini. Alberto oversees production and blending at the co-ops in the Languedoc. Once he was happy with the quality, the wine was moved to Tuscany for maturation and bottling. This gave Alberto much better control over bottling and the final blend. For the first time this wine is bottled under stelvin closure to preserve its fresh fruit character and ensure it is free from cork taint. (12 x 75 cl)
This Semillon/Chardonnay is light lemon yellow in colour and is clean and lifted on the nose, with perfumes of fresh, ripe melon and a citrus tang. On the palate it has an attractive depth which comes from the lees ageing. This is balanced by a zesty, lemon/lime acidity on the finish. (12 x 75 cl)

A proportion of the grapes are handled anaerobically to preserve the fresh, citrus fruit aromas. The remainder of the blend is allowed air contact, giving richer notes of candied apricot and orange. Approximately 20% of the blend is put through malolactic fermentation. The wine sees no oak, however it derives its creaminess and roundness from extended lees contact. Hints of citrus fruits , candied fruits and wild peach flowers. A crisp and refreshing palate, dominated by notes of lemon and apricots with hints of cinnamon and brioche. The wine displays length of flavour and balance. (12 x 75 cl)
