In the final blend, Mary chose to complement the green apple and crisp citrus of the Sauvignon Blanc with approximately nine-percent Semillon for depth, complexity, and fullness with slight amounts of Gewürztraminer for a floral and spice notes and Chenin Blanc for a peachy softness. To round out the flavors with toasty, spice nuances, she barrel fermented a portion of the wine in French and American oak barrels for approximately two months.
