Very much a cool climate style of Cabernet Sauvigon with a dark purple-cherry colour with a brilliant hue. The bouquet is showing cedar, violets and dark berry fruits in perfect harmony while on the nose the Cabernet fruit is highly perfumed and intensely concentrated. Fine juicy Cabernet flavours on the palate are displaying masses of fine talcum powder tannins but nothing assertive or out of balance leading to a long and very fine finish. Dalwhinnie is located near the tiny village of Moonambel in the heart of the Pyrenees region of Western Victoria, Australia and is a super premium producer of Shiraz, Cabernet Sauvignon, Pinot Noir and Chardonnay. After 25 years of growing grapes, the 18 hectare vineyard is now fully mature, producing true varietal fruit characters with great concentration of flavours. At 595 metres above sea-level Dalwhinnie is the highest and most remote of the Pyrenees district vineyards. Surrounded and sheltered by the highest range, this unique bowl of vines is a world unto itself, located in a naturally undulating trough which falls away from the hills, forming an amphitheatre nestled into the ranges. A well made Chardonnay showing a medium straw colour with green tinges and a bouquet of fresh and rich citrus aromas combine with grilled cashew nuts and spice. The fruit characters on the bouquet flow through on to the palate which is perfectly integrated. The delicious supple and creamy flavours in the mid palate lead to a long and textured finish. An assortment of uplifted black cherries, bramble fruit aromas with underlying hints of scorched almonds, mocha, vanilla, tabacco and sweet toasty cinnamon oak. Layers of plush plum, blackberry fruits and soft savoury spices. A persistent medium-bodied palate integrated with ripe dusty tannins and subtle oak flavours. This wine combines fruit sourced from cool climate regions of Victoria's Pyrenees and Strathbodie Ranges. The Cabernet Sauvignon adds rich cassis, mocha and soft dusty tannins whilst the blending of Merlot imparts a voluptuous breath of delicate plum and black-forest flavours across the mid-palate.
