It is my pleasure to announce that there is at least one thing in life that appears to improve with time and that is our comprehension of the riesling grape. The Pacific Rim is a bit of a breakthrough. Firstly, we have allowed just the teensiest bit of residual sugar to repose in the finished wine (12 x 75 cl)
Our newest incarnation of sangiovese is quite dark and mysterious, even brooding, owing to the strong articulation of mineral tones which biodynamic viticultural practices tend to express. We seem to have channeled a very complex and elemental spectrum of flavors. Peel away one layer to find cherried pipe tobacco smoke, beneath another chocolate tones. From the periphery, liquored cassis and black cherry fruit are beginning to expand to the center. The tannins while prominent, are moving in the right direction toward resolution. And beneath it all, is the mineral crunch that we love to love. (12 x 75 cl)
Bonny Doon Vineyard's are near the small town of Bonny Doon, just minutes North of Santa Cruz and it is here that they have produced a rose wine blended from grenache, marsanne, cinsault and sangiovese grapes. This wine is a Provencal style rose with charasmatic aromas of herbs, citrus rind, rosehips and hibiscus along with a very pleasing, mild astringency on the back palate. This makes for a delicious aperitif, and allows the wine to pair much more elegantly with a wide variety of foods. (12 x 75 cl)
