The reputation of this domaine is already very high and with Olivier's youthful enthusiasm there is no doubt that these wines will be the benchmark for St. Aubin for many years to come. Additionally, he is in the process of converting the family holding of 16.5 hectares to organic viticulture . Olivier, like so many of his young peers, abhors wood flavour in his wines, but likes the gentle oxidation that fine oak brings to the wine. His solution, in common with many other thinking vignerons, is to switch from the Burgundian 225 litre 'fut' to the 500 litre 'demi muid', which originated in the Rhone valley. This greater mass of wine means that new wood can be employed without too much flavour and tannin being leached out into the wine. An elegant solution, resulting in supremely elegant wines.
