Description:
Château de Maligny is owned by the Durup family. There have been Durups living in the village of Maligny since the 15th century. Jean Durup's great grandfather tended the vines of the Château Maligny for 30 years at the end of the last century. Since Jean Durup took over the family Domaine all oak has been banished from the spotless tiled Durup cellars. Wine is kept in cement vats lined with fibreglass and also stainless steel storage tanks. Apart from refrigerating the wines to remove tartarate (i.e. to prevent the formation of crystals), the wine is given the minimum amount of treatment to retain maximum character of the soils in Chablis. The result is a very consistent, successful fruity, almost flowery Chablis. with a fresh and flinty taste, exactly the correct character of the terroir.
The area of Fourchaume is an extension of the northerly slopes of the Grands Crus and the wines it produces often reflect this terroir. Fourchaume is distinguished by its power, length and elegance and this wine displays all these qualities. (6 x 75 cl)
Corinne and Jean-Pierre Grossot are the third generation of winemakers from this family owned domaine, where they cultivate 13 hectres of Chablis Appellation Controlée vineyards. The grapes are hand harvested, gently pressed to achieve the fullest extraction of flavours and aromas. The juice ferments very slowly at low, controlled temperatures in stainless steel tanks. After a first racking, the new wines age in stainless steel only, which is traditional for Chablis. Finally the bottling takes place 1 year after the harvest. (6 x 75 cl)

Guy Mothe built up the highly successful Domaine de Colombier by starting with a tiny holding and then acquiring small parcels of land that came up for sale over the years culminating in 33 hectares of vineyards. Most of the vineyards are dedicated to the production of AC Chablis, although there are significant holdings in 1er Cru Fourchaume and Grand Cru Bougros. The straight Chablis benefits from vines on the Grand Cru side of the river, giving them a buttery richness that balances their natural acidity. (24 x 37.5 cl)
