WINEMAKER'S COMMENTS Fairly round and inviting. Nicely focused, with ripe, juicy raspberry fruit and hints of mocha and spice. Slightly firm around the edges, but there's plenty of fruit here to enjoy. VINIFICATION Hand harvested in small baskets, selected lots of grapes are used for this wine. With special vineyards conduction to obtain a deep flavour's concentration. The winemaking process is carried out in stainless steel tanks and macerated for 15 to 20 days. The new wine, after malolactic fermentation, is matured for 10 to 14 months in stainless steel tanks. AGING The wine is aged for twelve months in new oak. 70% American Oak & 30% French Oak barrels. This wine is aged 6 months in bottles before release. FINING & FILTRATION Prior to bottling, the wine is filtered with earth pads to achieve biological stabilization up to 1NTU and undergoes a strict microbiological control (12 x 75 cl)
