Bernard Defaix, fourth generation of a family of vine-growers, started in 1959 with 2 hectares. Today the domain stretches over 26 hectares including vineyards in Chablis Premier Cru , Chablis and Petit Chablis. Today, the Domaine is run by Bernard Defaix's sons Sylvain and Didier and this grand cru is situated on the west/south-west extremity of the seven grands crus of Chablis. The cuvee of Bougros comes from a vine located on the top of the slope, so the exposure to the sun is excellent. Vinification is achieved in an old arched cellar in the center of the village, where the very first wines of Domaine Bernard Defaix were vinified. The wine is fermented and aged in oak barrels with regular 'batonnage.' Finally, the wine is bottled without filtration after 15 months ageing. This has produced a lovely yellow coloured wine with very pleasant flavours of flowers, honeysuckle in particular, and mineral notes. The flavours have developed a complex, full mouth with good length. (12 x 75 cl)
Cultivated on 8 hectares of this Premier Cru located on the slopes of the village Milly and on the river Serein. Domaine Bernard Defaix are the biggest owners of this cru. The remarkable stony and sunny soil is captured in this powerful and complex wine. It flourishes with age and expresses mineral aromas reminiscent of gunflint. The Côte de Lechet is indeed one of the Premiers Crus of the Chablisian vineyard with the most exceptional ageing potential. (12 x 75 cl)
The Cote de Lechet is an historic terroir located on extremely steep south/south east facing slopes exposed to the sun. The vineyard is full of large round stones which retain the heat from the sun and contribute to the ripeness and roundness of the wine in the mouth. (6 x 75 cl)
