This is a range of wines made from only the finest Australian fruit from specialized growers and wine makers. Behind every wine is a story - and this one starts 175 years ago when Governor Macquarie detailed a group of explorers to establish an overland route to the Hunter Valley.
One wild, windy night as the intrepid travelers were crossing Wollombi Brook, misfortune struck. Cockfighter, the lead horse, became bogged in river quicksand and despite all efforts, drowned. A fateful night that gave birth to the legend of Cockfighter's Ghost . . .
The Cockfighter's Ghost range is produced by Poole's Rock Wines and it's philosophy for Cockfighter's Ghost is to produce single varietal wines from Australia's finest wine regions, including of course, the Hunter Valley.
The original 8 hectare vineyard is planted to chardonnay and semillon, while there is a small block of old vine shiraz dating back fifty years. These estate vines are the foundation of the range which currently includes six wines - Chardonnay, Unwooded Chardonnay, Semillon, Verdelho, Shiraz and a Western Australian Pinot Noir.
A premium wine from the West this wine is made exclusively from superior quality grapes grown at Pemberton, a finely crafted pinot noir that expresses the true calibre of this dynamic young viticultural area of Western Australia.
A combination of traditional and contemporary winemaking techniques were used to create this wine. Careful canopy management resulted in a good crop of fully ripe grapes, a significant proportion retained as whole bunches to produce those elusive Burgundian berry flavours.
The must was fermented at relatively high temperatures in small stainless steel vats, with regular twice daily pump-overs. After gentle pressing, the wine was transferred into a combination of new and old French barriques for 12 months subdued oak maturation, prior to a light filtration and bottling.
Cockfighter’s Ghost Pinot Noir 1999 is a vibrant youthful crimson colour with appealing Burgundian aromas of black cherry, strawberry and hints of dusky varietal earthiness. The complex palate displays ripe berries leading to ‘gamey’ mushroom flavours underpinned by subtle, defining French oak and balanced acid with gentle tannins.
