Today, more than 80% of Jacob's Creek is now enjoyed in over 60 countries around the world - making it Australia's most popular wine and Australia's Top Drop.<BR><BR>Jacobs Creek winemakers selected parcels of fruit with the desired characteristics for this vibrant red style, Grenache displaying sweet cherry and spice, and Shiraz showing distinctive pepper and raspberry flavours. Supple, ripe tannins were required in both varieties. <BR><BR> Each parcel of fruit was gently crushed and de-stemmed to a combination of different stainless steel fermentation vessels. Fermentation regimes were varied to suit the characteristics of the individual fruit parcels, with particular care taken to retain fresh fruit flavours. Some riper Shiraz underwent extended skin contact to maximise flavour extraction and promote the integration of fine tannins. After malolactic fermentation, wines were stored cool to ensure freshness and vibrancy. <BR><BR> Parcels were continually reviewed during the vinification process; only those displaying generous red berry and spice characters combined with soft, silky tannins were selected for the final blend. The wine was blended, clarified and bottled as soon as possible after harvest in order to preserve the youthful fruit flavours. <BR><BR> This wine is a medium crimson coloured wine with vibrant purple hues and aromas of raspberry and cherry liqueur with underlying violet and pepper notes. Fresh red berries and spice on the palate complement the medium weight, fruit-driven wine with surprising depth of flavour.
