This Soave Classico is a bright, very pale gold colour, with youthful greenish lights. On the nose it is delicately perfumed, with aromas of white flowers, and almondy notes characteristic of good Soave Classico. The Garganega (90%) gives structure and acidity to the wine, while the Trebbiano di Soave (10%) gives perfume and richness of flavour. The Le Colombare is made solely from Garganega grapes that have been dried on straw mats for about five months following the harvest. Its rich luscious fruit has flavours of almonds and hazelnuts that linger for ages on the palate. Le Colombare from Pieropan is obtained from the shrivelled recie of choice Garganega grapes, the top part of each bunch, with the ripest and best exposed berries. The bunches are laid out on traditional straw mats, in well aired rooms for a few months. In early spring, the semi-dried grapes are pressed, and the resulting juice is fermented and aged in oak barrels for two years. Intense gold, almost amber coloured, delicately reminiscent of exotic fruit and apricots on the nose, its initial impression on the palate is delicately sweet, a prelude to pleasing and unexpected aromatic complexity. Pieropan’s estate covers 30 hectares of vineyard, all of which are situated on the hills of the Soave Classico zone. The Pieropan family has been producing wines in Soave since the 1860s. Indeed, they were the first producer to bottle a wine with the name Soave on the label, in the early 1930s. Nino Pieropan took over from his father in 1970, and was the first to produce a single vineyard wine, Calvarino, in 1971. The Calvarino vineyard has been in the family since 1901. (6 x 50 cl)

On the nose it is perfumed and floral, with notes of elderflower and fresh cherries, and a touch of lemon when young.
