The yield was extremely low, and the fruit very good quality. Here te Sauvignon Blanc grapes were harvested in stages to achieve a crisper varietally true Sauvignon, with a full mid-palate, then in the winery destemmed, crushed and held in the drainer overnight. The juice was then cold fermented, and left on its lees for 5 months before bottling. This has produced a pale straw coloured wine showing an intense gooseberry and nettlea nose. The palate combines the good varietal flavours with a long enjoyable finish.
