A skilful blend of the noble grape varieties Semillon, Sauvignon Blanc, & Chardonnay. Characteristics - A meld of grassy passion fruit with appealing fullness on the palate and well defined varietal flavours. Enjoy by itself or ideal with seafood, pasta or light meat dishes.
Winemaker's Notes All the grapes for our Classique 2000 were picked on the estate in March of that year. As this is our "classic dry white" blend, the grape varieties were Semillon, Sauvignon Blanc and Chardonnay. The grapes were brought straight to the winery from the vineyard and crushed, pressed and pumped into stainless steel, refrigerated tanks for settling. The clear juice was then racked to fermentation tanks for alcoholic fermentation. This process took 10-20 days. The wine was then cold stabilized and subjected to a fining procedure. After this the wine was filtered and was ready for bottling in September 2000.
