In the spring, the wine is transferred into oak barrels where it matures for 12 to 15 months. After careful sampling, the wine is assembled into the final product and bottled. The must obtained by pressing is left to ferment for around 7-8 days at a temperature that varies between 20 and 22º C. The wine is then filtered and half is left to refine in steel tanks and half in barriques. At the end of spring the two wines are mixed together and the wine is left in the bottle 4 or 5 months prior to being released.
