The wine blend has been further improved with a higher percentage of Chardonnay, a longer and slower second fermentation, and a few months lees ageing prior to bottling. This has given the wine a more elegant taste. Legislation in France now recognises this as a "Vin Mousseux de Qualite", an accolade which reflects the quality and improved taste of the wine.
