Description:
Noe Apollonio founded the company in 1870 and now Marcello and Massimiliano Apollonio are the fourth generation of the Apollonio family to carry on the family business. Today, great care is taken in the production and vinification of local grape varieties to produce wines of uniquely southern Italian character. Powerful and complex, the wines have flavours of ripe, dark fruits and leather, attractive weight, richness and balanced tannin.
This wine is a blend of 70% Negroamaro, 15% Montepulciano, 5% Malvasia nera di Lecce, 5% Malvasia nera di Brindisi and 5%Sangiovese. Once the manual harvest is completed it undergoes traditional soaking for 30 - 45 days and fermentation of the must at controlled temperature. This is followed by 6 months in French and russian barrels and 6 months in bottle.
This has produced a ruby-red coloured wine with a clean, generous and full-bodied bouquet. A classic blend it is showing soft, ripe berry fruit, leathery, spicy notes and a warm succulent finish. It is advisable to first decant the wine and then serve in a large bowl-shaped glass.
