Taste: Amber in color with a honeysuckle nose and a full, rich combination of flavors. Sweet and complex, this wine is perfect with twice-baked biscotti such as cantuccini di Prato. Vinification: The grapes, which are exclusively from the three Antinori estates in Chianti Classico, are carefully selected and picked at various times during the harvest. Those picked during the earlier part of the harvest have higher acidity, while those picked later have a higher sugar content, ensuring a correct balance between sugar and acidity at the end of vinification.Once picked, the grapes are spread by hand on special straw mats in the appassitoio, a large, airy loft situated on the estate of Tignanello, and left to dry until the end of December, when they are pressed. The must is then transferred into traditional small, 50-200 liter oak casks known as caratelli, where a long, slow alcoholic fermentation takes place, which is interrupted when the wine reaches at 15/16 %vol. The wine then ages in the caratelli for about 3 years, undergoes a very light filtration, and is bottled. Alcohol: 16% vol.
The ancient Antinori family have lived in Florence since the early 13th century when they moved from Calenzano, a small town between Florence and Prato, where their presence was recorded back in 1188. Wine is part of the family history and as early as 1385 Giovanni di Piero Antinori registered with the Guild of Winemakers. Wine remained the family's main passion and activity to the extent that in 1898, the 'Fattoria dei Marchesi Lodovico e Piero Antinori' was founded, and the property and farms were transformed into a really modern and well-organised business. Ormanni Chianti Classico Riserva is made by traditional vinification of Sangiovese alone and the grapes are selected and picked by hand with the greatest care in their finest vineyards. Once in the winery the wine is matured for about twelve months in Segain Moreau and Gambas Barriques of oak from the Allier that have been subjected to medium high levels of toasting. This period in woods softens the tannins contained in the grapes and permits the wine's bouquet to develop, in balanced fashion as it imparts rich vanilla aromas typical of wood ageing. A Sangiovese wine with an intense ruby red colour and fruity, fine and persistent nose. Showing aromatic and balanced flavours this is a wine to enjoy. (12 x 75 cl)
