Description:		This is a range of wines made from only the finest Australian fruit from specialized growers and wine makers. Behind every wine is a story - and this one starts 175 years ago when Governor Macquarie detailed a group of explorers to establish an overland route to the Hunter Valley. One wild, windy night as the intrepid travelers were crossing Wollombi Brook, misfortune struck. Cockfighter, the lead horse, became bogged in river quicksand and despite all efforts, drowned. A fateful night that gave birth to the legend of Cockfighter's Ghost . . . The Cockfighter's Ghost range is produced by Poole's Rock Wines and it's philosophy for Cockfighter's Ghost is to produce single varietal wines from Australia's finest wine regions, including of course, the Hunter Valley. The original 8 hectare vineyard is planted to chardonnay and semillon, while there is a small block of old vine shiraz dating back fifty years. These estate vines are the foundation of the range which currently includes six wines - Chardonnay, Unwooded Chardonnay, Semillon, Verdelho, Shiraz and a Western Australian Pinot Noir. The third release from young Hunter Valley vines, this premium verdelho exemplifies the ability of the Broke Fordwich district to produce superior wines. Made from entirely from grapes grown in free-draining sandy loam soils, this wine shows the benefits of an exceptional vintage. Excellent conditions resulted in top quality fruit, colour and flavour concentrations. Harvested in late January, the grapes were must-chilled then held briefly on skins. The juice was cold-cellared for two days, then racked and dry fermented at cool temperatures with an aromatic yeast. The wine was held on lees for a short time prior to stabilisation, filtration and bottling. Cockfighter’s Ghost Verdelho 2000 is appealing unwooded wine with gentle green straw hues, zesty lifted tropical guava, spice and talcum aromas with matching crisp tropical flavours as well as a long, tangy satisfying finish.

The appearance is lively lime green colour. The aroma is of fresh tropical fruit salad which is also evident on the palate. An excellent wine for asian cuisine, seafood and salads. This Verdelho is best served slightly chilled. The fruit for this wine was selected from the winery block which has low vigour soils . Vigilant monitoring during the growing season was undertaken due to the susceptibility of this variety to late season powdery mildew. This low yielding block was canopy managed allowing 60 % of shoots to remain unpositioned on the western side of the vine allowing protection from the hot days experienced during January. The vines reached desired maturity levels and were harvested at night in early March. Winemaking The yeast selected for fermentation was used to produce lifted aromas. The ferment was held at 15C before being chilled, settled off lees and racked. An excellent wine to be enjoyed young and fresh. (12 x 75 cl)
