This small family-owned and run domaine cultivates 24 acres, all in the small village of Fuisse. This village is said to produce the ripest Pouilly Fuisse with the most flavour, due to its situation and soil. It lies on gently undulating hills, thus capturing the sunlight easily and the chalky soil is a mixture of limestone and slate. The emphasis at Domaine Thibert is definitely on quality rather than quantity and they produce solely Pouilly Fuisse from chardonnay grapes. The wine is fermented in a combination of stainless steel and barrique and then aged in a barrel. This Pouilly-Fuisse is a real vin de pierre, dry, stony, taut. This white is a serious proposition from 43-year-old vines with high density planting on limestone marne soil. Vinification and ageing is traditional in foudres , the rest in futs de chene while the wine remains on the lees before bottling. Available in 37.5 cl Half Bottles. (12 x 37.5 cl)
