The sauvignon blanc was picked in April and the semillon in May and June, ensuring fully ripened, varietally intense fruit. Both were fermented by their natural, indigenous yeasts, the sauvignon blanc being in stainless steel to retain its zesty, bright fruit characters and the semillon in old, oak barriques to give richness, flavour and length. The wine has a complex array of aromas and flavours suggestive of passion-fruit, guavas, paw-paw, gooseberry, dried herbs and turkish musk.
