The wines produced from the viognier grape variety, are exclusively white and are renowned for their bouquet of violets and apricots. As with all Cuillerons Condrieus the grapes for Les Chaillets are all harvested by hand but from selected older areas. All the wine is fermented in oak, 60% of which is new. Vinified dry from grapes harvested in September and October, Cuilleron vinifies his various vineyard parcels separately, then puts together his wines in the weeks before the bottling. Wonderfully opulent and perfumed on the nose with dollops of honey allied to blossom and spicy complexity. The palate is rich and full again with great acidity, giving the wine exceptional balance.
