Description: A powerful wine showing intense aromas of passionfruit and gooseberry with undertones of lime and a subtle mineral note. It is full and rich with firm but balanced acidity and has powerful passionfruit and ripe nutty notes on the palate. Subtle fragrances of honeysuckle and lime add complexity and depth to the long lingering finish
Sauvignon Blanc is truly a variety that is made in the vineyard. Clean and ripe fruit will always produce great Sauvignon Blanc. After pressing, the wine is chilled and allowed to settle over a 24hr period. The wine is then racked, inoculated and fermented at cool temperatures for 15-20 days. After fermentation and maturation the various tanks are brought together to make a final blend.

Allan Scott Blanc de Blancs Sparkling Wine NZ
This non-vintage, bottle fermented wine is a blend of 70% Pinot Noir and 30% Chardonnay. It has been aged on yeast lees for three years, which has helped the wine develop a compex nutty and biscuity nose. The aging on lees has produced a wine with a deliciously rich and creamy palate that is well balanced and has a smooth lingering finish. (6 x 75 cl)

Tasting note: An elegant off dry wine displaying pear and light spice on the nose and pear and white stone fruit on the palate. A beautifully balanced wine with a well structured long lingering finish Viticulture Pinot Gris is a very distinctive rapid growing vine and being an aromatic variety to a certain extent we have planted it in a moderately stoney area which will enhance the characteristics. Vinification Being a first, debate ensued as to whether to make in the Pinot Grigio style or the more ambivalent style that is derived from the vines in Alsace. After a slow cold fermentation in stainless the wine was placed in older French oak barriques for a short period of maturation. (12 x 75 cl)

Tasting note: Soft and subtle amounts of Turkish delight make this wine instantly recognisable. This is surrounded by floral complexities, especially rose petals, to add extra interest to the wine. The full palate, enhanced due to the wild yeast ferment, is well balanced and elegant. It finishes well and long with a lingering spiciness. Viticulture After procrastinating on a token area of Gewürztraminer vines we have finally seen the first crop of a small planted area from the Hounds vineyard. Conventially trellised while grown on particularly stoney soils our expectations are high for producing highly perfumed elegant wine in the future Vinification As a first crop this was uniquely hand picked by a group of visiting restaurantuers and employees over from Wellington for the day. Pressed, settled in the usual way and a slow cool ferment ensued. (12 x 75 cl)
