Malolactic fermentation and many decantings preceed the aeging process, which is performed in French oak casks for one year. Once bottled the wine remains in the winery for at least one yearbefore finally released.

Vinification No 4 is made from Merlot grapes grown in the 'La Sarda' vineyard in the municipality of Miranda de Arga. The vines are trained on the espalier system to maximise exposure to the sun, producing robust, powerful wines.Grapes are harvested by hand between September and October. Grapes are pressed by pneumatic press followed by fermentation at 26-28 degrees C, they are then left to macerate for 10 days. The must is then put through malo-lactic fermentation and put in 100% new French Alliers oak for 3-6 months. (6 x 75 cl)

The wine reflects both the winemaking style of oenologist Jesus Lezaun and the terroir of Sarria's vineyards.Depending on the vintage the wine sees between 3 and 6 months in new allier casks following malolactic.The grapes were harvested by hand in September-October and gently pressed by pneumatic press . Temperature controlled fermentation in stainless steel and malolactic fermentation followed. The wine is then transfered to 100% new Allier oak barrels for 3-6 months. (6 x 75 cl)

Vinification This naturally sweet wine is made fron muscatel grapes from vieyards controlled by Senorio de Sarria. The vines are located in the southern Ribera Baja of Navarre, a superior setting for growing this grape variety because of its luminosity.After the crushing, the grapes undergo a low-pressure pressing process to obtain the free-run juice. The fermentation stops naturally at the exact moment of desired sugar concentration. (6 x 50 cl)

Vinification A young wine made from 100% Chardonnay fruit. The location of the vineyards of Senorio de Sarria, some 500m above sea-level, provide the perfect conditions for growing the variety.Grapes are harvested ny hand and machine during September and October. The grapes are then pressed by pneumatic press . The must is then cooled to aid natural clarification for 16 hours, and then decanted and fermented in temperature controlled stainless steel at 16 degrees C for 12-15 days. (12 x 75 cl)
