Description: The Wine: Valpolicella Solane - 55.000 bottles - has a deep ruby colour, with garnet tints; a typical, very distinctive, complex bouquet with hints of vanilla and cherry conserve and balsamic, floral and ripe fruit notes; a dry, warm, concentrated flavour with an elegant, spicy (black pepper), toasty, lingering aftertaste. Particularly rich and robust, it can keep for a long time and still improve.
Vinification and Maturation: the bunches are harvested by hand into wooden boxes during the first ten days of October; the vinification by the red wine method is carried out with 10 days maceration and frequent pumping of the must over the cap; the fermentation takes place at between 28-30ºC; in February the new wine is refermented with the pomace of Amarone and then racked into French and American barriques (once, twice and three times used); the maturation in wood lasts 12 months.
Unusual fact: the traditional practice of ripasso with the pomace of Amarone gives more structure and greater richness of bouquet.
Area: D.O.C. area in the province of Verona.

The Wine: bright ruby red; the bouquet is intense and complex, with recalls of bush fruits and bitter almonds, fern, violets and spices. Dry taste, full, warm and harmonious with an elegant aftertaste of cherries and bitter almonds. Vinification: the ripe grapes are hand picked at the beginning of October; traditional vinification in red with 10-12 days on skins maceration; fermentation takes place at 28-30ºC. Ageing: 12 mounths in Slavonian oak; after bottling it refines at least 6 months in the bottle. Area: Commune of Illasi Vine: Corvina, Rondinella and Molinara Grapes. The Vineyard: 15 ha of vineyards situated in the Castle area in the Commune of Illasi at an height of 132-160 metres south west exposed. The soil is mainly composed of limestone and stones, loose with layers from the Cretaceous era. Santi Amarone della Valpolicella DOC Veneto
The Wine: deep and bright garnet red; the nose is intense, deep with dominance of dry grapes and plums and hints of spices , cherry jam and iris; taste is hot, full and vigorous, austere with an elegant peach's stone and toasted almonds aftertaste. Vinification: the selection of the healthiest grapes takes place around five days before the beginning of the harvest in October ; the grapes are hand picked and placed in plateaux of 7 Kg where they are left to dry naturally for 4 months in dry and well ventilated rooms. The natural drying enriches the sugar in the grapes able to produce up to 15º in alcohol. In February the dried grapes are pressed and vinified in red with a long maceration. The yield is limited to 40%. Ageing: three years in Slavonian oak; six months refinement in bottle before consumption. Area: Areas of Negrar, Fumane and Marano Vine: Corvina, Rondinella and Molinara Grapes. The Vineyard: particularly vocated vineyards situated in the historical areas of Negrar, Fumane and Marano. The training system is spur cordon exposed South West on a stony, clay and limestone soil. (6 x 75 cl)
Santi PROEMIO Amarone della Valpolicella DOC Veneto
The wine: has a purple colour with garnet rim; intense, very complex bouquet with strong notes of raisins and prunes and hints of vanilla, cinnamon and cherry brandy; full, generous and very firm flavour with an elegant, lingering aftertaste of conserve and spices. It is already well developed, but can keep thanks to its firm and balanced structure. Vinification and Maturation: from the end of September the healthiest bunches are harvested by hand into 7 kg wooden boxes and then left to dry in a controlled humidity until the February; after the pressing the traditional maceration lasts for more than three weeks; towards the end of the fermentation the wine's racked into lightly toasted French barriques used for a varying number of times; the wine's matured for 24 months in wood and rests 6 months in bottle before being sold Unusual fact: this is the modern version of the classic Amarone; richer in fruit, it takes less time to reach the optimum balance for consumption. Production started with the 1995 vintage. Area: San Pietro in Cariano, Marano and Fumane Vine: Corvina, Rondinella and Molinara Grapes. The Vineyard: selected vineyards in the communes of San Pietro in Cariano, Marano and Fumane. The vines are trained by the cortina pendente system on soil of average density with clay and limestone mixed with stones well exposed to the southwest. (6 x 75 cl)

Cantina Negrar Valpolicella Classico Superiore DOC
Seven gentlemen, on august 23, 1933, set an appointment in the offices of Francesco Betteloni, notary public, to sign the deed giving birth to the Cantina Sociale Valpolicella. Today, the Cantina Valpolicella directs and coordinates the production of approximately 200 grape-growers with vineyards covering a total of 450 hectares. All these are located in the classic Valpolicella hillside zone. All have the same dedication and passion as the original founders. They work together and in their mutual interests to turn member producer's grapes into high quality wines, performing activities that improve winemaking and grape-growing knowledge and culture. The vineyards are situated on about 450 hectares in the classical Valpolicella Hills area Northwest of Verona, which are mostly concentrated in the town of Negrar. The most used system of cultivation is the traditional Pergola system, with about 2,500-3,000 plants per hectare, while the average age of the vines is 20 years. The cultivation of the vineyard has among its primary objectives the maximum possible degree of respect for nature: for this reason, biological techniques are used, and pesticides are used as little as possible. A blend of Corvina 65%, Rondinella 20%, Molinara 5%, and Corvinone 10% this wine is made from grapes located in the heart of the classic Valpolicella zone on the Negrar hills. The harvest is done entirely by hand, with many selections for special wines, such as the Amarone, produced from single vineyards to exalt its characteristics. This wine is a ruby red colour with hints of violets. The bouquet is a combination of red fruits with sweet tannin while the vinous and spicy palate is well balanced, full bodied and velvet (24 x 37.5 cl)
