Vire-Clesse is one of France's newest appellations. It was granted by the Institute National des Appellations d'Origine in November 1997, following many years of campaigning by the vignerons of Vire and Clesse, and in particular by the Cave de Vire who control the lion's share of the appellation. The creation of Vire-Clesse appellation recognises the commitment to quality both in the vineyard and the winery, which Cave de Vire subscribe to. Yields are strictly controlled - 55hl/ha compared to the average Maconnais yield of 50-70 hl/ha. The Chardonnay grapes, which are grown on Jurassic limestone soils, are cool fermented in stainless steel and the malolactic fermentation used to turn the harsh malic acid into softer lactic acid. The wine is unoaked to allow the intense characteristics of the Chardonnay grapes to be revealed. The wine has a wonderful explosion of fruit on the nose and firm grip and length in the mouth. The fruit is richer and more concentrated than a straight Macon Village because of the restricted yield and age of the vines.
The Michel family cultivates now a 12 hectares estate, with vineyards of 60 years old on average, and in particular the oldest vineyard of Clesse, on the hillside of Quintaine, at ''les Bollonds'' locality. This vineyard was planted after the phylloxera att (12 x 75 cl)
