A complex bouquet of black cherry and raisins. The palate is full bodied with vibrant fruit characters and strong earthy flavours. A soft velvety texture finishes with good balance and length. (12 x 75 cl)
Appearance :Vibrant purple in colour. Bouquet :Rich,complex aromas of perfumed shiraz fruit. Palate :A full fruit palate with berries,pepper and subtle oak. Cellaring :The wine should continue to develop complexity for 4-8 years in a good cellar. Winemaking:Fruit is destemmed to open fermenters with 10% whole bunches and is cold soaked and fermented on skins for a total of 12 days.Both foot plunging and pumping over were used to extract colour and flavour and temperatures reached 35 ºC at the peak of fermentation.All parcels were fermented to dryness.The resul- tant wines are racked,blended and matured for 10 months in 25% New French oak and 75%2 and 3 year old French barriques before blending and bottling.A percentage of Viognier was added to the blend contributing perfume and complexity and overall aroma and flavour. Appearance :Full ruby in colour. Bouquet :Ripe pinot noir fruit aroma with well integrated oak. Palate :Full bodied with intense ripe plum flavours.A wine with great texture and softness. Winemaking:A combination of winemaking techniques are used to produce a final blend with complexity and balance.These include cold maceration before fermentation,inclusion of whole berries and allowing the wines to ferment naturally.The components remain separate until final blending.Maturation is completed in new,one year old and two and three year French barriques for 10 months for all parcels.Minimal handling and filtration is adopted to preserve fruit flavour.

This is preserved during winemaking with gentle, low intervention techniques to produce wine with varietal detail and purity. Light straw coloured Viognier with green tints and a lees aroma. The palate is showing intense spicy fruit flavours with elegance and freshness. (6 x 75 cl)
Appearance: Straw gold in colour. Bouquet: Complex aromas of fig like fruit and toasty oak. Palate: Tight, ripe, complex fig like fruit with barrel ferment and nutty oak characters. A long-flavoured palate with some malolactic fermentation. Quite lean with excellent balance. (6 x 75 cl)
