Elephant Walk is produced by Bovlei Winery. Established in 1907 it is the second oldest co-operative winery in South Africa.
The winery obtains its grapes from mainly three areas: Agter-Groenberg, Bovlei & Leeuwrivier. For the past 98 years Bovlei Winery has been preparing palatable wines and this can be attributed to the excellent terroir from which the vine extract its treasure.
This lovely red coloured blend of Cinsault and Ruby Cabernet is produced in an easy drinking style with good balance and enjoyable finish.

As a result it has produced a bright zingey elderflower scented wine with good concentration of fruit and fresh grapefruity acidity. (12 x 75 cl)
This wine comes from the Western Cape is the only area in the world where Rooibos tea, known since the time of the San for its medicinal properties, can be cultivated. It seemed only natural to combine the South African sun with ripe locally called Hanepoot grapes on a bed of organic Rooibos tea. During the drying of the grapes on straw and Rooibos tea, the fragrance of the Rooibos has infused the grapes. Next gathered the grapes are put through the crusher and destemmer. Next the fruit is soaked in its own juice, at low temperature, to re-hydrate the more raisined berries. The mash was then pressed and is being fermented in barrels until the yeast can go no further. Stellar Winery is situated 275 km north of Cape Town on the road to Namibia. The winery makes use of a semi-arid climate, unrivalled refrigeration capacity and extensive in-house engineering skills to produce modern, Fairtrade organic wines. Stellar Winery was the first organic vineyard and cellar operation to receive the highly sought after Fairtrade accreditation. Fairtrade companies undertake to empower economically disadvantaged workers and ensure that a fair price is paid for the product along the whole supply chain. Stellar Winery undertakes a big commitment with both farm and cellar staff transported to and from work, while families receive health care and the permanent services of a community worker. Workers receive free housing, electricity and water as well as subsidised schooling and child-care facilities. Finally, a percentage of the wholesale price of the wine is paid directly back to the Stellar Fairtrade Workers' Trust. The wine is made in the sparsely populated Namaqualand region and does not suffer the light pollution that plagues urban areas around the world. The dark nights and clean air result in a breathtaking cosmic display with the aptly-named Milky Way at its centre and the producer pays homage to this phenomenon with the Stellar Range. The wines are assembled from different farms, ferments and yeasts. Each wine in the blend starts with deep colour and ripe fruit and tannins. Individual nuances arise from organic agriculture, saline irrigation water, cooling afternoon winds, wild ferments and other still-to-be-discovered influences. Lightly wooded for structure rather than flavour, these wines offer a tasting experience that will provide a convincing argument for the ascendancy of organic over conventional wines. TASTING NOTES Aromas of cherry, plum and chocolate are found on the nose with grassy, minty flavours on the midpalate. Soft tannins lead to a smooth, long finish. IN THE VINEYARD With a slow long ripening period of the harvesting season excellent cultivar fruit flavours and full, soft tannins were formed. The 7 tons per hectare bush vine grapes were selected from vineyards high up on the slopes of the Hawekwa Mountains. Overhead irrigation was given only twice. IN THE CELLAR The grapes were handpicked at 24.8º Balling and after crushing and destemming fermented in open tanks and pump over every 4 hours at 24 (12 x 75 cl)
TASTING NOTES The wine was made in rotor tanks and turned regularly. This led to excellent colour extraction and rich stylistic cultivar flavour. The wine has upfront sweet berry/banana spicy vanilla flavours with a good colour and a balace complex aftertaste. IN THE VINEYARD With a slow long ripening period, the grapes were picked late in the ripening period. This led to good cultivar flavours and a berry with a thicker skin. The grapes are from the bushvine blocks with a yield of 8 ton per hectare. The soil is in the higher slopes of Bovlei at the foot of the Hawekwa Mountains. IN THE CELLAR The grapes were picked at 23.7º Balling when the grapes reached it's physiological ripeness with coloured pits and soft grape tannis. The grapes were crushed, destemmed and fermented on the skins for 8 days at 23 (12 x 75 cl)
TASTING NOTES The good integration of the wood and fruit in the wine offer tastes of wild berry, mint and typical smokey Shiraz flavours with a full after taste. IN THE VINEYARD Bovlei received the Shiraz grapes at optimum ripeness with a good concentration of flavours in the berries, which led to the typical Shiraz cultivar flavours. The Shiraz grapes came from one vineyard and yielded seven tons per hectare. The vineyard is trellised on an extended Perold System and drip irrigated. The vineyard is located on the lower part of Groenberg with a southwesterly slope. IN THE CELLAR The Shiraz grapes were handpicked at 25.5º Balling when it reached physiological ripeness. The grapes were crushed, destemmed and fermented on the skins for 8 days at 26º Celsius. After malolactic fermentation the wine was wood matured for 11 months in Hungarian oak barrels. (12 x 75 cl)
