Sourced exclusively from vineyard sites around the town of Sancerre in the upper Loire valley, the grapes are lightly pressed and chilled immediately upon reception at the winery. Fermentation is in steel tanks and temperature controlled in order to preserve the varietal flavours of the Sauvignon Blanc grapes. No oak, filtered and fined before bottling.
