The inaugural release under the Cockfighter’s Ghost Premium Reserve label this wine is made from specially selected parcels of cabernet sauvignon grapes grown in the renowned terra rossa soils of Coonawarra.
This finely crafted cabernet launches the new Cockfighter’s Ghost premium label, harvested in April, the top quality grapes were fermented for five days on skins with twice daily pump-overs.
Gentle pressing preceded a secondary malolactic fermentation and subsequent 16 month maturation in both new (50%) and old (50%) French oak barriques, prior to blending and bottling in January 2000.
Cockfighter’s Ghost Cabernet Sauvignon 1998 is an attractive dark red with purple hues. Elegant and full-bodied, this wine displays enticing intense aromas of briar, blackberry and mint underpinned by hints of eucalyptus and cedar. The velvety fruit rich palate and supple frame of silky tannins lead to a satisfying finish.
