First created in the early 1960's, R.D. is the outcome of research developed by the House of Bollinger on the ageing of champagne on its lees. Not only does the wine retain its freshness but, through the extra contact with the lees, develops more complexity and subtlety. Remaining for a minimum of eight years on its lees, the R.D. acquires a greater aromatic complexity and length. On the other hand, the recent disgorging (3 x 1.5 Litres)
RD stays on the lees longer than the normal Grande Annee and hence develops a greater yeasty richness which makes it a good partner for food. (1 x 3 Litres)
Special Cuvee is the quintessential expression of the Bollinger style. On average, 80% of the grapes come from Premiers and Grands Crus in Champagne. To ensure the consistency and continuity of the style, Bollinger adds to the blend a maximum of 10% of Reserve wines, which have been kept in magnum. The blend consists on average of 60% Pinot Noir, 25% Chardonnay and 15% Pinot Meunier, harvested from 30 different villages in Champagne.
