This wine is a dense ruby/purple colour showing layers of dried spice, coffee, blackcurrant on the palate it displays fullness, freshness and seamless oak integration.

Dark chocolate, anise and all spice dominate the nose of the Jester Shiraz, which are supported by hints of French oak, cherries and coffee. A fresh and juicy mid-palate enhances tannin and length. The wine has flavours of fresh plums and liquorice with hints of blackberry and espresso. A long and lingering finish. The grapes come from the Willunga district of McLaren Vale, where there are heavy grey loam soils over sandstone, intermixed with black Biscay clay. These soils combined with the maritime climate, contribute to an even ripening period and the development of rich fruit flavours and ripe tannins. A dry winter, followed by heavy rains in spring resulted in vines with healthy, balanced canopies on moist soils. Mitolo Wines is a family owned winery, established in 1999 by Frank and Simone Mitolo, with winemaker Ben Glaetzer. The wine name 'Savitar' refers to a mythical dragon-like monster while the wine comes from the Chinese Block vineyard which is located in the Willunga district at the southern end of McLaren Vale. Parcels of Shiraz averaging 20 years of age are grown on rocky, skeletal soils in the northeast part of the vineyard. The result is a dark red with a vibrant purple hue while the aromatics are bright, elevated combinations of cassis, tobacco and spice-box yet with freshness and vitality. The palate is full bodied, meaty and complex – well integrated oak and tannin provide elements of structure to the wine and it finishes with impressive length. (3 x 1.5 Litres)

Mitolo JESTER ROSE McLaren Vale South Australia
Tasting Note Deep Plum Colour. The nose shows a fragrant combination of red cherry and strawberry aromas. It is rich, juicy and has plenty of mouth-coating flavour. The palate displays layers of red berry fruit which combine with the mineral notes, cut through the hedonistic fruit and lead into a long dry finish. It has excellent intensity and depth of fruit which is carried through to the back palate by the clean acidity and just a touch of tannin to avoid any cloying. Winemaking A combination of whole berry and low fermentation temperatures ensures a lifted bouquet. The juice is left on skins for 3 days, then the free run only is drained off and used. The fermentation continues at low temperatures for 3 weeks and is then stopped, with a very slight amount of natural grape sugar retained. The wine is then cold stabilised and filtered before bottling. Vineyard The grapes come from the Willunga district of McLaren Vale, where the heavy grey loam soils over sandstone, intermixed with black Biscay clay, combined with the maritime climate, contribute to an to an even ripening period and the development of rich fruit flavours. Yield is around 2 tonnes an acre. Italian born, Giacomo was known as the King of all Jesters. Quick witted and a skilled performer, he delighted audiences with his magical acts, juggling, story-telling, music and sorcery. Jester to the Duke's Court, he spent his early years surrounded by the castle's opulence and grandeur. Promiscuous by nature, in 1575 he was promptly banished due to scandalous behaviour involving the duke's daughter. Giacomo Rosé 'Jester' celebrates the era where boredom was alleviated through humour and the banal through intellect. (6 x 75 cl)
