He represents the younger generation of vignerons keen to combine tradition with modern techniques.The vineyards have a very shallow top soil under which one finds a hard chalky soil, which imparts that subtle floral scent to his wines. Pinot Noir is particularly suited to cooler climates, and is ideal in the marginal climate of Sancerre. Only a small part of the estate is given over to Pinot Noir, and it occupies some of the best elevations and exposure. Grapes are hand harvested in small parcels at various stages of ripeness - slightly under ripe grapes to add a touch of acidity and slightly over ripe grapes for richness and increased aromas. After a light crushing the fermentation is begun in contact with the skins, but after only a few hours (generaly on the same day) the juice is racked off from the skins from which it has taken its delicate pink colour and then fermented to dryness as with a white wine. There is no oak used at all in it's production, and the wine is bottled young for early consumption. Pale salmon pink in colour with a subtle nose of wild strawberries. On the palate the wine is delicate and soft with elegant red fruit character and well balanced acidity. Clean and dry with a crisp, refreshing finish.
