When Quentin David inherited some family farmland in 1981, all of prime exposure and within the Appellation area, it did not take him long to convert it to accommodate vineyards.
Today he has 18 acres in production with the potential of developing a further 50 in the coming years. His wine is recognised as being a fine example of Pouilly and there is no doubt that Chateau Favray is one of the leading names on the market.
Vinification takes place in stainless steel with controlled temperature, while traditionally, the wine does not make any malolactic fermentation. Bottling only starts from July following the harvest.
This is pure Sauvignon Blanc, not just a grassy, acidic dry white but a round, lush wine with depth of fruit and fantastic concentration, and superb balance. Starting with an aromatic flowery/fruity bouquet and finishing with clean, crisp citrus style fruit, great length and limestone/minerally tones this is a wine to enjoy.
