Dark, full and aromatic with an emphasis on blackcurrant and cherry flavours. Cedar, vanilla and coffee oak aromas support the fruit. Tannins are fine-grained and soft. The blend captures the aromatic fruit, dark colour and strong tannins of Cabernet Sauvignon and augments them with the rich ripe fruit and soft tannins of Merlot and Cabernet Franc. Grapes are mainly from the Fairhall and Squire Estates and are fermented on skins for 15 to 21 days. Malolactic fermentation takes place and 25% of the wine is aged in new oak barrels. The wine is further barrel aged in a mixture of new and one and two year old American and French oak barrels for 10 months. It is racked at least three times to add further complexity and texture.
