Additionally, he is in the process of converting the family holding of 16.5 hectares to organic viticulture . Olivier, like so many of his young peers, abhors wood flavour in his wines, but likes the gentle oxidation that fine oak brings to the wine. His solution, in common with many other thinking vignerons, is to switch from the Burgundian 225 litre 'fut' to the 500 litre 'demi muid', which originated in the Rhone valley. This greater mass of wine means that new wood can be employed without too much flavour and tannin being leached out into the wine. An elegant solution, resulting in supremely elegant wines. Pale yellow in appearance with a slight greenish tinge, this wine has a rich buttery nose with hints of peach blossom and mint. The palate is full, rich and a little spicy, complemented by burnt caramel flavours with a lovely long finish. Deliciously creamy! (12 x 75 cl)
A lovely aroma of buttered toast combined with yellow fruits such as peach, leading to a generous and well balanced palate. A wine which will be best drunk within 3-4 years but can age up to 10 years when cinammon and roasted flavours will develop, adding mature complexity.
