Paul Jaboulet Aine CHEVALIER DE STERIMBERG Hermitage
A blend of 65% Marsanne and 35% Roussanne has produced a wine showing a pale yellow colour that is brightly tinted with very pronounced legs. The bouquet is rich and complex displaying aromas of ripe pears, notes of pastry, honey and caramel while a delicate woody character is evident. The palate is both full and warm, blending strength, finesse and elegance through to the finish. The grapes are harvested by hand into small, 20kg crates, then pressed straight away so as to minimise any risk of oxidation. The wines are then vinified traditionally in wood. Following malolactic fermentation in wood, the lees are regularly brought back into suspension through stirring over the 10 to 12 month ageing process, providing the wines with elegant and complex aromas.
