Ageing wines from Jerez takes place through the laborious, precise process known as the Criaderas y Solera system. In this process, the younger wines are blended slowly and methodically with other more mature ones. The older wines impart their flavour to the younger ones, while the latter freshen the former due to their youth and strength. All the grapes are from vineyards owned by González Byass in the Jerez Superior area and after approximately 5 years it is ready to drink. All the grapes are from vineyards owned by Gonzalez Byas in the Jerez Superior zone. This has produced a golden dark hue Sherry and a distinctive aroma with slight old oak notes.
