Description: In 1760, Jacques Kanon, bought Saint Martin vineyard on top of one of the finest slopes in Saint Emilion. The improvements made on the estate quickly resulted in the wine's success, and its new name of Canon. The estate was acquired by Raymond Fontemoing, a major Libourne wine shipper, in 1770. In 1919 the estate was bought by Monsieur and Madame Fournier, who invested a great deal of knowledge and effort into the property. Their grandchildren inherited their passion for wine. In 1996 the estate was purchased by the Wertheimer family, who also own the firm of Chanel. Canon's vineyard is located on a former limestone quarry and as a result the sub soil is full of underground galleries. The topsoil is mainly clay-limestone. Merlot and Cabernet Franc grapes are grown in the traditional way and the wine is fermented in oak vats. 18-20 months in barrel, (70% new).
