BRIEF TASTING NOTE Unique, heady, seductive wine with enormous complexity, extract and length. Great cellaring potential WINE NOTES Intense bright, deep black/purple colours, almost opaque. Heady aromas of black berry fruits, exotic spices and black pepper, along with complex dust and sweet blueberry aromas. The palate promises almost exactly the same and while again rich and heady, maintains and tightness of structure and fineness of tannin that is a hallmark of this style. The tannins feel coated in a sweet covering and acidity is beautifully integrated providing length and potential for longevity.
WINE NOTES Our Syrah is hand picked and hand sorted on a gentle sorting table. It is then destemmed without any Sulfur Dioxide and without a must pump, directly into open-top fermenters. Lengthy cold soaks on each batch are followed by an un-innoculated, cool fermentation. Extraction is carefully managed with delicate punchdown of the skins to avoid breaking the skins. Extended macerations are carried on for as long as possible, resulting in 20 to 30 day cuvaison. 100% French oak is used for elevage, with 35% of it new. Malolactic Fermentation is in barrel, and takes place the following Spring. The wine was bottled in December , unfined and unfiltered, as nature intended it. (12 x 75 cl)
WINE NOTES In its youth the wine is pale straw/lemon in colour with complex aromas of ripe stonefruits, apples and preserved lemon complimented by roasted hazelnut and crème brulee notes. The palate is initially forward and lush, with stonefruit and sweet apple flavours melded with hints of oatmeal, fresh grains and fine French oak. The wine retains its typical bony texture to finish fine and long with just a hint of juicy fruit and acidity to finish. BRIEF TASTING NOTE Dense brooding concentrated red wine in a modern Bordeaux style. Great cellaring potential. WINE NOTES Intense brooding, deep black cherry colours, almost opaque. Concentrated, complex aromas of black plums, cassis, liquorice, root spices, tobacco, coffee and violets that in their youth are tightly held. The palate is densely structured, with concentrated flavours that reflect the nose adding a further hint of sweet blueberry pie and bitter chocolate notes with fantastic fine fruit and oak tannins to finish. The palate is tightly wrapped in its youth opening strongly in the glass, indicating a cellar life of ten years +. Sophia...means wisdom: an honourable description of a wine created with the knowledge of the Old World, and the passion and innovation of the New. Sophia is made from low-cropping Merlot and Cabernet Franc vines grown in our Gimblett Gravels Vineyard. Hand harvested, and fermented in small fermentation vessels for almost a month, this wine spends a year in new French oak barriques. The best barrels are then aged for a further six months in seasoned French oak. Sophia is a rich, seductive wine that entices the palate. Its subtle power is revealed with time, up to 10 years from vintage, in a wine of density, complexity and real beauty. A natural deposit may form over time as this wine is bottled unfiltered. A deep red wine with a ripe and complex bouquet of berry fruits and oak character. The plumpness of the Merlot is complimented by the perfume and front palate sweetness of the Cabernet (12 x 75 cl)
This vintage has created a unique expression of this vineyard, due to the long hang time on the vine. The grapes were hand harvested and whole bunch pressed, with the clear juice fermenting at very cool temperatures for more than four months. In its youth the wine shows aromas of lucerne hay, preserved lemon, ripe apple and complex mineral notes. The palate is rich and forward like but with a straw/apple/lemon zest character and a pure juicy mineral laden finish. Serious Riesling for serious Riesling lovers.
