Aimé Sabon first established his cellar in 1973 and now owns a total of 50ha including 13ha in Châteauneuf-du-Pape. The best sites are planted on a mix of galet stones, sands and clay and provide exceptional fruit.

Since taking over the winemaking from his father in 1991, Christophe Sabon has set this 45 hectare property on the road to becoming the Beaucastel of the future. Tiny yields from the old vines give great intensity of fruit, while the flavours are preserved by temperature control, and expertly sculpted by judicious us of barrique. Christophe’s talent is to express the brightness and intensity of the grape, and capture all the nuances of terroir.

Sourced from the single vineyard 'Bussiere' which is a mix of galet stones, sands and clay. The vines yield a respectably low 45hl/ha and are hand harvested. Ageing is in 30% new barriques for 12 months.

A blend of 50% Merlot, 30% Syrah, 10% Grenache and 10% Cabernet Sauvignon this wine is a beautiful example of Southern French grape varieties; rich in colour with ripe, red fruit, well-married tannins and herbaceous, spicy flavours full of southern warmth.

Harvest is by hand and the grapes are transported in small wooden crates in order to reduce bruising. After de-stemming they are gently crushed in a pneumatic press and fermented at a cool, controlled temperature in stainless steel. Ageing is in barrels for 6 months, 25% of which are new, and batonnage is performed regularly. Only 5000 bottles made annually. The nose is fresh, fruity and aromatic, with ripe tropical and dried fruit characteristics. The palate is medium bodied with a succulent texture, balanced alcohol and acidity and a great concentration of dried fruit flavours, such as apricot and peach, with a honeyed, silky finish. The Grenache Blanc and Clairette in the blend are sourced from vines planted in the 1940's. 100% aged in 1/3 new barriques with lees stirring for 14 months. Between 900 and 1200 bottles made in any year so the availability is limited This is a blend of 80% Rousanne, 10% Clairette and 10% Grenache Blanc with a ripe, expressive nose of dried tropical fruits and citrus. The palate is medium bodied, silky and full of apricot and pineapple fruit with a crisp, dry finish. (6 x 75 cl)

Sourced from hand harvested, very old Grenache vines planted in the single vineyard 'Chaupin' which was planted in 1912 on sand and clay soils. The yields are a low 30-32 hl /ha and the grapes are picked and sorted by hand with partial destalking . Maceration is for 21 days with a manual pumping over every 24hrs, oak ageing is for 12 months, 70% in large old barrels and 20% in 1/4 new barriques. Good ruby red coloured wine with ripe, serious aromas of currant, chocolate, liquorice and Provencal herbs. Fat and dense but fresh and stylish, with a lively mineral quality and solid ripe acidity. Finishes with very smooth tannins. (6 x 75 cl)

Ageing is then undertaken in large oak barrels and in 1/3 new barriques . This Deep red-ruby wine is a blend of 75% Grenache, 15% Syrah and 10% Mourvedre has fruit-driven aromas of cassis, redcurrant, smoke and spice. Soft, lush and ripe, with enticing fruit and good balance. Easy going, generous and balanced for early drinking appeal.
