Great care is taken from the vineyard to the winery when making this wine. The vineyard is cultivated without herbicides, chemical fertilizers or synthetic products. Small amounts of copper and sulphur are utilised in addition to fertilizers derived from animal and vegetal compost. The soil is ploughed by horse three times a year to preserve the natural balance and to avoid erosion and compression of the soil. When ready the grapes are manually picked and carefully sorted grape by grape. The harvest is destemmed, lightly crushed and put into cement vats, next alcoholic fermentation starts due to natural yeasts. The grapes are then macerated for 20 days at a temperature of 25°C and the Free run juice is pumped over the must every 4 days. The grapes are pressed just before the end of the alcoholic fermentation and the wine is matured in cement vats on fine lees for 20 months. Part of the wine is matured in barrel to enhance aromatic complexity. (12 x 75 cl)
A delicious, spicy, deeply coloured red Rhone from one of the best known villages in the heart of the appellation. The domaine has been owned by the Saurel family for 3 generations. Grenache, Syrah and Mourvedre comprise the blend resulting in a wine of great structure. (6 x 75 cl)
