Pinot Noir grapes are harvested in the early morning hours, crushed, and then cold soaked for 48 hours to elicit color and aromas. During fermentation, the grapes are punched down four times a day to intensify flavors and extract tannin. Finally, the wine is aged in small French oak barrels.

The wine has exceptionally dark colour, which is not typical of this varietal. It exhibits explosive aromatics of crushed raspberries, cranberries, and wild lavender. Impressive concentration, due in large part to the well-draining soils of our Monterey vineyards, the tannins are supple and the finish on this wine is extremely lengthy.

The Chardonnay grapes were sourced entirely from distinctive vineyards in Monterey. One, near the Gabilan Mountain range, is comprised of loamy sand, which offers ideal drainage to produce grapes with tremendous flavour concentration. A second vineyard, located in Arroyo Seco, benefits from its valley floor position where its relatively cooler temperatures are perfect for growing Chardonnay. This wine is produced by pressing whole clusters where fermentation is split between barrel fermentation in French oak and stainless steel-tank fermentation. The former is followed by secondary malo-lactic fermentation that contributes a creamy texture in this 100% Chardonnay. The latter is used to retain a crisp acidity and supplies a vibrant citrus essence on the finish. Once harvested the crushed grapes immediately and cold soaked the must for threedays to stabilize the colour. It was then fermented in open-top fermenters for nine days, with punch downs three times a day. The result is a silky, yet plush wine with crushed cranberry and allspice aromas hinting at clove and nutmeg. Barrel aged for 12 months in French oak, this is a great reflection of the Pinot Noir grape, it has beautiful flavours of cranberry, cherry, dried strawberry, and sweet moderate tannins. One consists of the traditional farmer who dry-farms head-trained, spur-pruned vines. Balance is attained by virtue of the vines' old age as well as early canopy management and fruit thinning when needed. The other employs more modern methods, including bilateral cordon, spur-pruned on-wire trellising, drip irrigation, and carefully manicured canopies. Francis Forrd Coppola source our Zinfandel grapes from vineyards on the benchlands and hillsides which are farmed both ways. The combination of the area's climate, our vineyard sites, and the two types of farming methods used produces excellent fruit with intensely concentrated flavour. This Zinfandel was blended with a small amount of Petite Sirah for 12 months in French oak. Half the fruit was crushed whole berry and the must is fermented in open-top fermenters for eight days, with punch downs three times a day, to ensure maximum flavor and color extraction. After fermentation, the wine was aged in French oak adding a wonderful toasted spice and French vanilla essence to its heady aroma of rum raisin with hints of black currant and red cherry. Sweet raspberry jam with currant and red spice flavors are wrapped up in a soft and luxurious texture with moderate tannins. The Russian River Valley climate is sculpted by a regular intrusion of cooling fog from the Pacific Ocean a few miles to the west. Much like the tide, the fog ebbs and flows, arriving in the evening, cooling the area down from its daytime high by as much as 35 to 40 degrees, and retreating the following morning. This natural air conditioning allows Chardonnay grapes to develop full flavour maturity over an extended growing season. The Chardonnay fruit are crushed whole-cluster and then fermented entirely in French oak barrels to achieve a seductive, round texture with quintessential Russian River Valley flavours of green apple, honeysuckle, and sweet vanilla with citrus notes. Its sweet perfume previews its palate with hints of honeysuckle, crisp apple, and orange blossoms.
