This is a rare wine, accounting for just 7% of the appellation's total output. From vines planted in sandy soil, and preferably blond sand. Produced with white grapes only: 30% Clairette, 20% Grenache Blanc, 25% Bourboulenc, 22% Roussanne and 3% Picpoul and Picardan. Crop picked and sorted by hand. Grapes destemmed, then pressed pneumatically . Temperature-controlled fermentation at 18-20ºC to obtain the fruit without technological aromas. Kept on fine lees for several months before bottling. No malolactic fermentation. Partly matured in vats and barrels. Blended and bottled early to trap all the wine's fruit and vivacious character. (12 x 75 cl)
