Cultivated from a single, tiny site in the home Grand Cru of Ay, Cote aux Enfants is exclusively Pinot Noir. The site is exceptional by its exposure and the nature of its sub-soils. These conditions allow a green harvest and the resultant production (as a Cote aux Enfants) of only a few thousand bottles. This vintage saw harvest commence on September 23rd. Grapes were then destemmed and macerated for 10-12 days whereupon the juice was transferred to 205 litre oak pieces (3 to 5 year old) where they remained for 2 years.
Grande Annee, the name, signifies that Bollinger's vintage champagne is only released during 'great' years. The Grande AnnÉe blend comes only from a particularly fine harvest. When such a harvest occurs the House selects its best wines, cru by cru and grape variety by grape variety (6 x 75 cl)
